Ingredients

  • Chicken Marinade
  • 1 pound thinly sliced chicken breast

  • 3 tbs vegetable oil

  • 3 tbs lime juice

  • 2 tbs soy sauce

  • 2 tbs chili powder

  • 2 tbs dried oregano

  • 1 tbs onion powder

  • 1 tbs garlic powder

  • 1 tbs paprika

  • Black pepper and salt as you like

  • Chopped cilantro

  • 1 onion thinly sliced

  • 1 of each orange, green and red bell pepper thinly sliced

  • 1 tbs vegetable oil

Directions

  • In a large bowl,add the chicken and combine 3 tablespoons oil, lime juice and add all the spices.Mix them well.Turn to coat,cover. Refrigerate for 1-4 hours.
  • In a large cast-iron or other heavy skillet, saute peppers and onions in remaining oil until crisp-tender. Remove and keep warm.
  • Drain chicken, discarding marinade. In the same skillet, cook chicken over medium-high heat until no longer pink, 4-6 minutes. Return pepper mixture to pan; heat through.
  • Spoon filling down the center of tortillas; fold in half. If desired, serve with toppings.
